Abstract

The aim of this study was to validate the quantification of total and restricted sodium concentrations, as measured with 23Na Single Quantum (SQ) and Double Quantum (DQ) Filtering Nuclear Magnetic Resonance (NMR) spectroscopy1 and to study the effect of increasing salt concentrations on the sodium distribution and mobility in bread.
