Abstract
Fødevarestyrelsen has received an enquiry from Kemi og Fødevarekvalitet regarding the finding of undeclared mustard in vegetarian lasagna. Two analysis reports have been submitted where mustard was not detected by ELISA. The supplier of frozen pasta sheets has previously reported a level of 2.5 mg/kg. No information on the analysis method used is provided. The pasta sheets are used with a 15% share in the vegetarian lasagna. The company reports a level of 9.1 mg/kg. It is assumed that this means 9.1 mg mustard protein/kg. No information on the analysis method used is provided. In total, four measurements were provided, from undetected mustard to 9.1 mg/kg. The assessment is performed using 9.1 mg mustard protein/kg as the worst-case scenario.
