Abstract
The International Centre for Indoor Environment and Energy (ICIEE) at DTU Civil Engineering has conducted a study on the thermal conditions of the working environment in more than 100 commercial
kitchens in the USA during summer and winter. The study shows that employees generally feel the working environment is warm and they’d like it cooler; but they still find it acceptable.
