Abstract
The aim of the project was to provide content data for macro- and micronutrients in flour, grains and seeds in the Danish market.
The selected 26 product types included in the project were: Wheat flour (Conventional, Organic and Durum), Whole wheat flour, Rye flour, Spelled flour (Sieved and whole grain), Organic pearl spelled, Organic pearl barley, Quinoa (White, Red, Black), Organic chia seeds, Sunflower seeds without shell, Bulgur, Grass kernels, Sesame seeds (shelled, peeled), Walnuts, Almonds, Hazelnuts, Pistachios, Pine nuts, Buckwheat (whole, flour) and Coconut flour. A total of 142 samples were collected from the 26 product types in the period September to October 2017. Then a pool sample was prepared for each product type, all pools were analyzed for nitrogen, fat, ash, dry matter, dietary fibers, vitamins (E, K1 , B1, B2, B6, pantothenic acid, biotin, folate), minerals and trace metals (sodium, potassium, calcium, magnesium, phosphorus, iron, copper, zinc, manganese, chromium, selenium, molybdenum, nickel, cadmium), fatty acids, amino acids, sugar and starch. The analyses were performed as double determination and accredited according to ISO17025. The results are intended for use in the Danish Food Database www.frida.fooddata.dk.
