Abstract

This research aimed to produce “fast-dissolving nanofibers” from polyvinyl alcohol (PVA) and pea protein isolate (PPI) by electrospinning using a green approach. Lion's Mane (LM) mushroom extract was added to the optimized PVA/PPI solution (PVA:PPI 50:50 by weight ratio added with 1 % v/v Tween20) to increase solubility of LM extract. LM extract can be encapsulated within PVA/PPI nanofibers and fast-dissolved in a phosphate solution. Results exhibited high potential use of electrospinning for encapsulation of bioactive compounds through fast-dissolving nanofiber forms.
