Abstract
Progress in enzymic lipid modification and synthesis in the past 20 yr is discussed, with particular reference to: enzymic hydrolysis; enzymic esterification; enzymic acidolysis; enzymic alcoholysis; enzymic ester-ester exchange; reaction and reactor optimization; product development; and process technology.
