Ecological modernisation in the public catering sector: Danish experiences with use of organic food

    Abstract

    In this paper we use the concept of ecological modernisation as frame to understand the relationship between two parallel developments in the public catering sector, namely the sustainability discourse and the rationalisation discourse. We argue that the two tendencies are increasingly merging. The focus is on organisational changes in the public sector in a sustainable perspective.
