Description

PROVIDE is a project to develop bioinformatics technology for the discovery of protein based food ingredients. Five enterprises and two universities collaborate with the aim to create the technology and develop new high value food and feed ingredients from protein sources that are currently under-utilized. We will use bioinformatics to predict and identify embedded peptides that can be released from proteins through hydrolysis, fermentation and separation. The targeted functionalities are antimicrobials, antioxidants, gelation, emulsifying and flavoring properties. Functional assays will be established and synthetic peptides will be used for validation. Release of the active peptides from the protein matrix will be obtained by enzymatic hydrolysis and fermentation. The participating companies utilize specific protein sources, mainly plantbased, and are united in the desire to develop novel high value food and feed functional
