The idea is to increase the consumption of ecological foods by encouraging the kitchens to use more ecological food an hereby promote a change in food production in a more ecological direction within the region as well as outside the region. The project is managed by the County of Frederiksborg and the Department of Technology and Social Science lends professionel assistance and process guidance.
