Description
The overall aim of this project is to improve the energy efficiency for heat treatment (cooking) of solid products in the food and feed industry using ohmic heating. With the current energy mix of electric power, the target is a 50% reduction in CO2 emissions, it is expected that the energy efficiency and CO2 reductions will improve along with the
implementation rate of ohmic heating. Furthermore, the project will investigate reservation of quality and nutritional value in the treated products and solve specific practical issues related to industrial scale implementation of ohmic heating. DTU will carry out absolute environmental sustainability assessment of the new technology.
