Description
The ApplePom project is a collaborative project comprising of competent partners from University (DTU) and Industry (Kødbyens Is, GNG as well as BLM) with versatile skill sets who will work closely together.
In the project the partners will produce new types of ingredients for the industrial partners based on microbial fermentation:
Apple pomace is currently a waste product from juice production, which ends up in biogas production. Measured as CO2 equivalents, it is estimated that a conversion back into the food chain rather than to energy is three times more CO2 efficient. Therefore, ApplePom will use fermented pomace to produce new ingredient types for producing ice creams as well as a plant-based leather alternatives for handbags etc.
