Structure, function, discovery and protein engineering of plant and microbial enzymes and proteins active in carbohydrate processing, redox-regulation and with potential for biotechnology-based improvement of functional, nutritional and health-related properties of foods and raw materials, including cereal crops. This involves analysis of molecular interactions, production of recombinant proteins, functional proteomics, genome-mining and bioinformatics.
