Research areas

I am interested in the development of sustainable solutions in food processing for the extraction and functionalization of interest molecules from food waste and food by-products. For this, I employ a combination of environmentally-friendly biotechnological methods to extract high-value fractions: proteins, chitins, and fatty acids. I explore the possible employment of green technologies, such as ultrasound, ohmic heating, and pulsed electric field to tailored their colloidal properties.
