I do research and scientific based advising in topics within fats and carbohydrates in foods with main focus on fatty acids.


I develop, validate (according to ISO 17025), and implement analytical methods for analysis of nutrients, additives, and allergens in foods, as well as nutrients in biological samples.

Furthermore, I design and perform projects to create new data for the Danish Food Composition Database and for calculation of intake among Danes to be applied in investigations of the relation between intake and development of different diseases in both animal and human studies. Establishment of a database with the content of trans fatty acids in foods on the Danish market during the last 15 years is used in human studies in DanORC (Danish Obesity Research Centre).

A novel interest is to develop methods for determination of the composition of lipid classes e.g. triacylglycerols and phospholipids, and thereby contribute to the understanding of the influence of lipids on the biological systems in animal and humans (lipidomics).

Besides, I examine carotenoids as a possible biomarker for intake of fruit and vegetables.

Participation in standardisation of reference materials from IRMM (Institute for Reference Materials and Measurements). Former member in EuroFIR (European Food Information Resource Network).
