Methods for reducing Campylobacter in the broiler production food chain are currently being investigated in the project SafeChicken. Camyplobacter is suspected to have properties that allow them to enter a dormant stage where the bacteria is not growing, but not dead (Viable But Not Cultuarble stage, VBNC). This is problematic when attempting to establish the presence of the bacteria using traditional culture methods for detection and enumeration of Campylobacter, as Campylobacter may not be growing in culture, but can still be viable at a later timepoint.
The project is designed to gather an overview of the current knowledge regarding the VBNC state of Campylobacter to understand the factors associated with Campylobacter VBNC stage through a literature study. The project will also aim to identify methods that can differentiate the VBNC and live/dead cells, which can be implemented in the master thesis project in the autumn of 2023.
