Description
An introduction about HACCP was made pointing the importance of ISO 22000 and Pre Requisites Programs to increase the efficiency of the HACCP program . A short description of the HACCP system, high lights in the HACCP history, definitions of the terms used in the system and explanation of the HACCP principles and methodology were made. A practical example and a exercise using the HACCP methodology were applied.
