The County of Copenhagen has decided to implement a 2-year pilot project (1995-97). The idea is to increase the consumption of ecological foodstuff by encouraging the kitchens to use more ecological food an hereby promote a change in food production in a more ecological direction within the region as well as outside the region. The projevct is managed by the Department for Techinal Administration of the County of Copenhagen and the Department and the Department of Technology and Social Science lends professionel assistance, process guidance and evaluation
