The overall aim of the 'FENAMI' project is the development, functionalization and characterization of functional nano-microstructure assemblies using food grade biopolymers (polysaccharies and proteins). The project will develop prototype formulations of nano-microstructures with high capacity to encapsulate/immobilize and release a range of bioactive compounds. The structural-functional properties of these nano-microstructures as novel components for food & bioengineered products, and the effect of different processing conditions to their functionality, will also be studied. A range of nano-microprocessing technologies, among others electrospinning processing, will be utilised.
