Hvert år gennemfører Fødevarestyrelsen 10-12 overvågningsprojekter over brugen af tilsætningsstoffer i Danmark. Jeg er projektleder for 3-5 projekter og kontaktperson på de øvrige projekter.

Vi har gennem mange år analyseret for fedtsyrer i fødevarer med vægt på transfedtsyrer og umættede fedtsyrer. Nu udvider vi til mere lipidomics-agtige aktiviteter, hvor vi på sigt vil kunne bestemme alle forekommende lipidklasser i biologisk væv og væsker fra triacylglycerider til phospholipider, sphingomyeliner osv.

Jeg er projektleder for indførelsen af et nyt LIMS system i afdelingen, hvor vi har købt licenser til systemet Labware-lims.

Jeg er involveret i metodestandardiseringsaktiviteter gennem medlemskab af NMKL’s danske nationalkomité og CEN, TC275 WG0, WG2 og WG8. Desuden er jeg formand for fødevarestandardiseringsgruppen S-291 under Dansk Standard, der styrer CEN-aktiviteten. Gennem NMKL har jeg desuden undervist i emnet metodevalidering i alle de nordiske lande.

Expertise

Analysis of and biological activity of fat soluble vitamins (vitamin A, D, E and K), of fatty acids and fat (erucic acid, n-3 fatty acids, trans fatty acids, conjugated fatty acids) and of cholesterol. The content and causes for variation of nutrients and food additives in Danish foods, including food composition, The Danish Food Monitoring System for Nutrients and Food Additives and health and safety evaluation of food groups taking into account both the content of nutrients, food additives and of pollutants. The consequences of organic growing compared to conventionel growing for the content of nutrients and other natural occurring substances.
