My key research topics: 

-  Formation of toxic compounds as part of the Maillard reactions in heat-processed foods mainly focus on acrylamide.
-  The significance of different parameters such as heating time – and temperature, ratio of precursors and water activity on the formation/elimination of acrylamide.
-  Detection of different intermediary products in the Maillard reactions by HPLC-MS/MS or ESR (detection of radicals), and inhibition of the Maillard reactions/acrylamide by antioxidants.
-
Currently working speciation of arsenic with focus on Inorganic Arsenic by HPLC-ICP-MS.
