The objective of this study is to enhance energy efficiency of baking process for an industrial application. The focus of the work is to optimize the performance of the oven chamber used in baking the products. That will be accomplished by developing a robust mathematical model of heat and mass transfer in the baking oven. Air flow pattern, air velocity and design parameters are important factors for optimizing the performance of the oven. Modeling the process requires solving partial differential equations. ANSYS-CFX software is chosen to solve the heat and mass transfer equations.
