Expertise

 

Biological Quality - interactions between the live animal and the subsequent quality effcts

Understanding the mechanisms behind changes in the live animal, which influences the quality of the food product. Monitoring of the biological quality parameters using new methodologies as vision and functional real-time assays. Further develop the multidisciplinary approach to food quality, by collaboration with industry and academia (International and national including other DTU departments)

Research: As a newly initiated research field the main focus is to establish the concept of Biological Quality and position the group as an international partner within the field. The means to achieve this will be an expansion of the expertise, which are in the group so the holistic approach to Biological Quality can be maintained. Therefore, the group as a hole is focused on pursuing new techniques, which can be used to illustrate and link pre-harvest effects on post-harvest quality by the connection of biological information. Focus are relating to immunological responses to changes. Changes may be introduced by pathogens, the invironment or the organism per se. With an immunological fundation the biological effects on quality is monitored and explained usingen a wide ragne of techniqThese techniques include Advanced Proteomics, Microscopy, Cell-biology and functional assays, Advanced Expression and Ontogeny studies as well as Mathematical modelling and Image-analysis.
