Professor, dr.techn. Jens Adler-Nissen’s research is focused on the physical understanding and modelling of the interaction between product quality and process conditions in cooking, frying and baking processes. He has patented and commercialised a new process for frying in large scale. Jens Adler-Nissen has been the leader of several large research centres in the area of food technology and biotechnology.
