CM’s main current research focus is animal models in food allergy and development of risk assessment methods in food allergy. In the EU project ALLERGEST she was responsible for the animal experiments studying the sensitising potential of digested allergens. She is currently member of the management team of the EU IP project EuroPrevall (The prevalence, Cost and Basis of Food Allergy Across Europe ) where her group studies the sensitising potential of related food allergens and their transformation products. In addition she is leader of the projects Theme 5, a cross-project activity designed to translate the research into food allergy management. She has been a member of the management team in the two EU concerted action projects: ‘Food Allergens of Plant Origin - the relationship between allergenic potential and biological activity’ and InformAll on communication strategies and information on food allergy to industry, regulators and consumers. CM was responsible for the immunotoxicology part of the shared cost project (QLK1-1999-00651) ‘New Methods for the Safety Testing of Transgenic Food’ (SAFOTEST) and for the LLNA assays in the TIMES-SS validation study. CM is advising the Danish Environmental Protection Agency and the Danish Veterinary and Food Administration in matters concerning allergy. She is vice-chairman of the National Committee on Cosmetic Products. She has served on several international committees dealing with matters of immunotoxicology including allergy.
